Smoky Beef and Spicy Rice Burritos

This is a really quick and easy meal that can also be doubled up for meal prep. They’re high in protein, carbohydrate and vegetables whilst relatively low in fat. I’ve used a seeded tortilla wrap here to add some extra fibre; however, plain white tortillas will work fine. I’ve also topped these with Mexican-style microwavable rice to make this an even faster recipe. If you don’t wish to use microwavable rice, please use my spicy rice recipe instead.

If, like me, you find yourself running out of lunch ideas and supplies, this might just solve some issues for you. The beef filling can be paired with pretty much anything for a quick go-to meal.

 

Ingredients:

  • 5% Fat Minced Beef – 500g
  • Red Onion – Diced – x 1
  • Garlic Cloves – Crushed– x 3
  • Chopped Tomatoes – x 1 Tin
  • Mushrooms – 200g chopped
  • Peas – 80g
  • Sweetcorn - 80g
  • Bay leaf – x 2
  • Soy Sauce – 1x tbsp
  • Worcestershire Sauce – 1x tbsp
  • Smoked Paprika - 1 tsp
  • Balsamic vinegar – 1x tbsp
  • Vegetable oil – 1x tbsp
  • Salt and pepper to season
  • Seeded tortillas – 8x
  • Mexican Style Rice – 2x Packs

Method:

  1. Heat the oil on a medium heat in a deep frying pan before adding the beef mince. Break up the mince evenly and fry for ~5-7 minutes or until browned on all sides.
  2. Next, add the onion and mushrooms and cook for 4-5mins until soft.
  3. Add the garlic, and cook for a further minute.
  4. Next add the chopped tomatoes and stir well, before adding the Worcestershire sauce, soy sauce, balsamic vinegar, smoked paprika, peas, sweetcorn, bay leaves and seasoning well.
  5. Leave partly covered for 25minutes on a low/medium heat and allow to reduce.
  6. Once the beef has reduced, add 4x heaped tablespoons to each tortilla before topping evenly with Mexican style rice and serving.
  7. Optional: Top with grated cheddar cheese/sour cream
  8. Serve and enjoy
